friday night dinner

After a week at work, tiered and ready to not do much at all, I love a simple and comforting dinner.

Luckily, Theodore had baked some fresh bread during the day. All I had to add was a fresh salad and a little broth with egg.
I topped the salad with carrots, celery, apple, raisins and some shredded cheese. The raisins add a little sweet flavor. Usually we eat our salad with just salt, pepper, balsamic vinegar and a little olive oil. Voila' a yummy salad!

For the soup, I use better than bouillon. It is my favorite. Once the broth was boiling I used a wire whisk to add two eggs. Simple, but warming!
